T Stands For V-8

 

 Today you'll find me in my kitchen.

I'm trying to eat healthy and get my strength back, which is why I'm having a V-8 as my drink of choice for T this week.

On my paper plate is a flaky croissant I've filled with tuna salad and some of my fresh basil from the garden.  I also made a pasta salad using ranch dressing instead of mayo.

  1. What a coincidence, Elizabeth, my post is from my kitchen as well! Great minds... I hope you will get back your strength, and I like the idea of using ranch dressing instead of mayo for a pasta salad. Happy T day!

  2. I always loved V 8 juice, but for some reason I haven’t had any in years. A great drink for T day! I am glad you seem to be feeling better. I hope you can regain some strength, now.

  4. You must be feeling better if you're thinking about food and trying to eat healthily. Great!
    Is Ranch dressing healthier than mayo? I have no idea as we don't have ranch dressing here (and I have never tasted it). I know that mayo is made with eggs, if it is real mayonnaise....
    I have tried V8 before and was disappointed as it was so sweet. But low sodium and 100% vegetable juice sounds healthy to me.
